Founded in 2018, Nippon Viajero aims to accomplish two objectives: firstly, to foster a community where individuals can immerse themselves in Latin-American culture, and secondly, to provide a guidebook for those residing in Japan who miss authentic Mexican cuisine.
Since then, I have dedicated myself to refining, testing, and enhancing our soon to be a cookbook recipes, allowing me to create traditional Mexican dishes using locally sourced Japanese ingredients, culinary tools, and most importantly cooking in a Japanese kitchen.
I wanted to share this beautiful process with you because it is much my community as it is yours. And so I hope you can join me in the last round of recipe testing for some of my favorite summer time dishes.
