At Nippon Viajero, we invite you on a captivating journey through the diverse and culturally rich landscapes of Mexico. Our workshop is designed to take you on a virtual exploration of the various regions that make up this extraordinary country.

Through engaging presentations, interactive activities, and expert-led discussions, we will bring the essence of Mexico’s regions to life.
Our culinary instructor will guide you through the hands-on experience of making authentic Colima staple dishes with Chef German Oliva, the head chef for the Mexican Embassy and Colima Cultural Ambassador.
The class is 3 hours long and includes welcome drink, materials, ingredients, lunch, and recipes.

Ceviche de Pescado with Tostadas
Located in the central-western region of Mexico, the state of Colima boasts a unique approach to preparing fish ceviche, setting it apart from versions found in other states. The key distinction lies in the cutting technique used for the fish.
In Colima, it is customary to finely chop the fish, creating a texture akin to ground meat, whereas other variations feature small cubes of fish. The texture of Colima’s fish ceviche stands out as well. Unlike most recipes that aim for a juicy dish, Colima’s version tends to have a drier consistency, making it an ideal complement to crispy tortillas.

About Guest Culinary Instructor
Chef German, a culinary expert and cultural ambassador, has been based in Tokyo since 2019. He holds the prestigious position of chef at the Mexican embassy in Japan, where he passionately promotes Mexican gastronomy. With a degree in Culinary Arts from the University of Colima, German has honed his skills in diverse culinary and wine traditions across Mexico, the United States, France, Italy, Monaco, and Japan.
To further refine his craft, he pursued culinary studies at esteemed institutions such as Lycée Hotelero y Técnico de Monaco, the University of Science and Technology of Hong Kong, Autonomous University of Baja California, Fondation Turquois, College of Gastronomy, and the University of the Cloister of Sor Juana, among others. However, his educational journey extended beyond the kitchen, as he also pursued additional studies at the Mexican National School of Anthropology and History, focusing on Mexican cuisines and food culture. Chef German’s extensive knowledge in the field led to him being awarded the title of Young Sommelier 2019.
In his role as a culinary expert, Chef German undertakes various projects globally and in Japan. He conducts culinary seminars for Mexican restaurants, cultural organizations, and local communities, sharing his expertise and promoting the richness of Mexican cuisine. Additionally, he authored a recipe book titled “From Mexican Cuisine to the Japanese Table,” solidifying his position as a recognized cultural ambassador.
As a delegate of the Conservatory of Mexican Gastronomic Culture (CCGM), an agency consulted by UNESCO for intangible cultural heritage in Mexico, German actively engages in preserving and promoting traditional culinary practices. He produces articles on traditional cuisine, participates in fairs and gastronomic festivals both domestically and internationally to showcase Mexican culinary traditions, and collaborates with traditional cooks to safeguard culinary identity and traditional preparations. German’s dedication to preserving cultural heritage through food is truly commendable.

Unfortunately, we do not allow cancellations, rescheduling of classes, or participant swapping, as we have a strict no cancellation and non-refundable policy. We kindly ask that you mark your calendar and plan accordingly before making your purchase.
As your class date approaches, we’ll send you a friendly reminder email with all the necessary details and the location of the class. We want to make sure you have all the information you need to fully enjoy your experience with us.
To ensure we can reach you with any updates or reminders, please provide us with a working email. If you’re booking for another guest, please add their email address. And if you have any special requests, feel free to add them in the note section.
We want to make sure all our participants have a safe and enjoyable experience. While we won’t be enforcing a mask rule, we do encourage all participants to refrain from attending the class if they’re feeling unwell. We appreciate your cooperation in keeping our community healthy.
General Terms and conditions when attending Nippon Viajero culinary activities
RIGHT TO REFUSE:
Nippon Viajero holds the right to refuse a participant to attend a class if the instructor feels they are intoxicated or may cause harm to themselves or anyone else attending the activity
RELEASE OF LIABILITY: When participating in a Nippon Viajero cooking class where the participant will be around or using sharp and potentially dangerous tools suitable to a kitchen environment, the participant releases, indemnifies and excludes Nippon Viajero and its employees from any and all liability of any kind for any damage or injury incurred while attending or visiting Nippon Viajero cooking classes.
The participant understands these terms and conditions and accepts the inherent risks of a kitchen environment when they book and make full payment for a cooking class.
START TIME: Classes run by Nippon Viajero start on time. If you are not on time for the cooking class, we will proceed without the participant and they will be considered a no-show. We have a strict no refund no cancellation policy.
DAMAGE/LOSS OF PERSONAL PROPERTY: Nippon Viajero will take all necessary care but does not accept responsibility for the damage to or loss of merchandise left in the venue prior to, during or after a class. Nippon Viajero is not responsible for the loss or damage of personal items in any form.
DAMAGE/LOSS OF NIPPON VIAJERO PROPERTY: The participant may be held financially responsible for any damage to or loss of Nippon Viajero property during the class. The cost of repairing any damage to walls, doors or other parts of the property as a result of inappropriate conduct will be charged to the person involved.
CIRCUMSTANCES BEYOND THE CONTROL OF NIPPON VIAJERO:
Nippon Viajero will be unable to provide for your class due to circumstances beyond their control, Nippon Viajero, is not responsible for any costs, damages or expenses that you may suffer or incur.
