About the Author
Vanessa is a first-generation Mexican American who began her journey in Tokyo in 2017 with a simple goal: to understand the world around her through food. Eager to immerse herself, she completed several culinary certifications, including Japanese chef training, which gave her the confidence to start adapting the Mexican dishes she grew up with to her new life and small Japanese kitchen.
Since then, she has hosted countless events, shared her table with people from all walks of life, and developed recipes that can be recreated anywhere—whether you’re cooking for one or for a family. Living in Japan taught her the beauty of seasonality and the art of presentation, lessons that now shine through in her Mexican cooking.
Today, Vanessa is a private chef in Hayama, where she creates intimate dining experiences and continues to build connections through food. She has also had the honor of catering for the Mexican Embassy in Japan and its formal guests. Alongside her work with Nippon Viajero, she has contributed to Tokyo’s growing taco movement—sharing her perspective as both a cook and cultural bridge, inspiring new ways of enjoying Mexican food in Japan while honoring its roots.
Through her project, Nippon Viajero, Vanessa brings people together to celebrate Mexican and Latin American cultures, blending tradition with creativity and always keeping community at the heart of her work.
